Honolulu Chicken is a delicious, easy-to-make dish that combines tropical spices, pineapple juice, and soy sauce for a sweet and savory flavor, perfect for various serving options like with rice, a poke bowl, or even a loaded Hawaiian sausage sub. This versatile meal is not only simple to prepare but also captures the essence of Hawaii, offering a taste of paradise with every bite.

Equipment

  • Tupperware or airtight food container for storing

Ingredients
  

  • Main Ingredients
  • 800g Chicken thigh fillets or boneless chicken breasts halved
  • 80ml or ⅓ cop Barbecue sauce
  • 2 tbsp Soy sauce
  • 80ml or ⅓ cup Pineapple juice 80ml or 1/3 cup
  • Flavor Enhancers
  • 2 cloves Garlic cloves finely minced
  • 1 small Brown onion thinly sliced
  • 2 Green shallots sliced diagonally
  • 1 cup Green onions chopped
  • 1 cup Bell pepper sliced
  • 160g or ½ cup Peach & mango jam peach preserves
  • 1 can 6 ounces Water chestnuts
  • Cooking and Seasoning
  • 2 tbsp Vegetable oil
  • 2 tbsp Sesame oil
  • ½ tbsp Sesame seeds toasted
  • ¼ cup Flour
  • ¼ tbsp Black pepper
  • Salt to taste
  • Dash of seasoning to taste

Instructions
 

  • Prepare the Marinade
  • Mix soy sauce, pineapple juice, brown sugar, minced garlic, and minced ginger in a bowl to create the marinade.
  • Add chicken breasts to the marinade, ensuring they are well-coated.
  • Refrigerate for at least 30 minutes to allow the flavors to penetrate.
  • Slice and Prepare the Vegetables
  • Slice the bell pepper and carrots.
  • Chop the green onions.
  • Sear the Chicken
  • Heat vegetable oil in a skillet over medium-high heat.
  • Remove the chicken from the marinade (reserve the marinade), and sear each chicken breast for 5-7 minutes on each side until browned.
  • Set the chicken aside.
  • Stir-Fry the Vegetables
  • In the same skillet, add the sliced bell pepper, carrots, and chopped onion.
  • Stir-fry for about 3-4 minutes until they are tender-crisp.
  • Combine and Cook
  • Add the reserved marinade to the skillet and bring it to a simmer.
  • Return the chicken to the skillet, cover, and cook for 2-3 minutes until the chicken is cooked through and coated in the sauce.

Notes

Once the chicken is done, sprinkle with toasted sesame seeds and green onions, then drizzle the sauce over.
Serve with rice for a flavorful meal.
