Instructions
 

  • Step 1: Prepare the Dough
  • Mix all-purpose flour, salt, a pinch of turmeric, and cumin seeds in a large bowl.
  • Add a little ghee or oil for a flaky crust.
  • Gradually add water and knead into a soft, smooth dough.
  • Cover the dough with a cloth and let it rest.
  • Step 2: Make the Spiced Potato Filling
  • Heat oil in a pan and sauté chopped onion, garlic, and ginger until golden brown.
  • Add mustard seeds, green chilies, and coriander leaves.
  • Stir in boiled potatoes and a squeeze of lemon juice.
  • Mix everything well, add spices, and let the filling cool.
  • Step 3: Shape the Samosas
  • Divide the dough into small balls.
  • Roll each one into an 8.5-inch flat circle.
  • Cut each circle in half and fold it into a cone.
  • Seal the edges with a small amount of water.
  • Stuff the cone with the prepared potato masala and fold it neatly.
  • Step 4: Cook the Samosas
  • Deep-Frying: Heat oil and deep-fry until golden and crispy.
  • Air-Frying: Preheat the air fryer to 180°C (350°F) and cook for 10-15 minutes until golden brown.
  • Shallow Frying: Fry in ghee for a richer flavor.
  • Step 5: Serve with Chutney
  • Pair your crispy samosas with mint or tangy tamarind chutney for a delicious finishing touch.

Notes

Storage Tips: Once cooled, store samosas in an airtight container or wrap in foil. If storing for longer, you can freeze them for up to a month. They can be heated directly in hot oil or in an air fryer without thawing.
You can experiment with different fillings like keema (minced meat), cheese, or vegetables.
