Ingredients
  

  • For the Ramen:
  • 1 lb ground beef or thinly sliced sirloin steak
  • 2 packs instant ramen noodles discard seasoning packets
  • 2 cups low-sodium beef broth
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp apple cider vinegar or rice vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh or frozen ginger minced
  • 1 tsp cornstarch optional, for thickening
  • Toppings & Add-ins Optional:
  • Stir-fried bell peppers mushrooms, bean sprouts, or broccoli
  • Soft-boiled eggs
  • Sliced green onions
  • Sesame seeds
  • Red pepper flakes for heat

Instructions
 

  • Prep Ingredients:
  • Chop your vegetables, mince the garlic and ginger, and slice steak thinly across the grain if using.
  • Cook Beef:
  • Heat olive oil in a large skillet over medium-high heat.
  • For ground beef: Cook and break up the meat until browned and cooked through.
  • For steak: Sear slices until caramelized, then set aside.
  • Make Sauce:
  • In the same pan, reduce heat. Add garlic, ginger, and brown sugar. Stir for 30 seconds until fragrant.
  • Add soy sauce, toasted sesame oil, vinegar, and beef broth. Let simmer for 2–3 minutes to blend flavors.
  • (Optional: Mix cornstarch with a tablespoon of water and stir in to thicken.)
  • Cook Ramen:
  • In a separate pot, cook ramen noodles according to package directions (2–3 minutes). Drain and set aside—do not overcook.
  • Combine & Simmer:
  • Add cooked noodles and beef to the sauce. Toss to coat. Stir in your veggies and simmer for another minute.
  • Add Toppings & Serve:
  • Divide into bowls and top with halved soft-boiled eggs, green onions, sesame seeds, and a sprinkle of red pepper flakes. Drizzle with extra toasted sesame oil if desired.

Storage & Reheating Tips:
  • Store leftover noodles and broth separately in airtight containers in the refrigerator for up to 3 days.
  • Reheat the broth until hot, then add noodles just before serving to prevent them from becoming mushy.
  • Add fresh toppings after reheating for the best flavor and texture.
