Prep Ingredients:
Chop your vegetables, mince the garlic and ginger, and slice steak thinly across the grain if using.
Cook Beef:
Heat olive oil in a large skillet over medium-high heat.
For ground beef: Cook and break up the meat until browned and cooked through.
For steak: Sear slices until caramelized, then set aside.
Make Sauce:
In the same pan, reduce heat. Add garlic, ginger, and brown sugar. Stir for 30 seconds until fragrant.
Add soy sauce, toasted sesame oil, vinegar, and beef broth. Let simmer for 2–3 minutes to blend flavors.
(Optional: Mix cornstarch with a tablespoon of water and stir in to thicken.)
Cook Ramen:
In a separate pot, cook ramen noodles according to package directions (2–3 minutes). Drain and set aside—do not overcook.
Combine & Simmer:
Add cooked noodles and beef to the sauce. Toss to coat. Stir in your veggies and simmer for another minute.
Add Toppings & Serve:
Divide into bowls and top with halved soft-boiled eggs, green onions, sesame seeds, and a sprinkle of red pepper flakes. Drizzle with extra toasted sesame oil if desired.
